Day 31 | Todiefor Gingersnaps and Halloween {cue the finale music}

Happy Halloween friends!

It's the Great Pumpkin!

We made it to Day 31!  Can you believe it?!

In honor of the wonderful Fall festivities which are upon us, I give you Todiefor Gingersnap Cookies.  This recipe was given to me by Dr. Julie Sweet, my Colonial American History professor my last semester at Baylor.  Dr. Sweet was passionate about the subject she taught and worked hard to make Colonial America come alive - including baking for these fabulous cookies for her students.  I have never forgotten her or her class, and I take a small trip down memory lane every year when I bake her gingersnaps.  Enjoy!

Dr. Sweet's Todiefor Gingersnap Cookies {I added the "todiefor" ;) }

Ingredients:
2 1/4 cups flour
1 cup brown sugar
3/4 cup margarine, softened {I use unsalted butter}
1/4 cup molasses
1 egg
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves

In mixing bowl, combine half the flour and all other ingredients.  Beat until combined.  Add in remaining flour and beat well.  Shape dough into one inch balls.  Roll in sugar.  Place on ungreased cookie sheet and bake at 375 degrees for 8-10 minutes.  Cool cookies on wire rack.

And because everyone loves babies...I give you our official candy distributor. ;)  He loved Halloween and cried huge crocodile tears when we took him out of his pumpkin costume for bath time. 

I was Lucy and Hubster was Charlie Brown. :)

  1. Yay - you made it! That photo of your son at the front door is so cute - glad you guys had a good night! I think these cookies might be the first thing I bake in our new place... once I find my baking sheets, that is. :)

I just stumbled across this 31 day spread from the 31 dayers link and wanted to tell you how much I enjoyed reading about your month :o) I read it all in a few days and am inspired to get cooking this weekend! I do cook at home now, but honestly only about once or twice a week and often rely on easy store-bought starters. I definitely want to try several of the recipes you listed here and am going to take stock of my pantry and compare to your list to see what i'm missing. Thanks for the inspiration and recipes and congratulations on sticking it out for 31 days!

    1. I'm so glad you enjoyed the series Vanessa! Store bought starters are a great base to work off of when you're short on time. I still take help from the produce section by buying my fresh organic spinach and arugula in the pre-triple-washed, packaged boxes almost every week. Let me know what recipes you try! :)
