Day 7 | Banana Bread Mini Muffins

My favorite cookbook for baby food is The Petit Appetit Cookbook by Lisa Barnes.   She has a fabulous recipe for Citrus-Corn Muffins that we tried out about 3 weeks ago.  Our little guy was so unbelievably excited to have his very own mini muffin to mutilate eat, that I've been trying out all manner of mini muffin recipes.

Banana bread was a Christmas treat growing up.  For as long as I can remember, my mom made banana bread every Christmas Eve which we weren't allowed to eat until breakfast Christmas morning.  Talk about torture - what with all the yummy smells wafting through the house!

My mom's banana bread recipe is from one of her dear friends, who I have always called Miss Kathy.  Because even now I cannot conceive of calling her just plain Kathy.  I played around with the recipe this morning and was not disappointed.  I'm not sure how many of these our little one will actually get to eat...

Banana Bread Minis 

Ingredients:
1/3 cup melted shortening
1 cup sugar {I used raw turbinado sugar}
2 eggs
1 cup all purpose flour
1/2 cup whole wheat flour {or you can use all purpose for this too}
2-3 large bananas mashed

Mix together the shortening and sugar.  


 Add eggs.  Mix in remaining ingredients.  Grease mini muffin pan and fill cups 2/3 full with batter. 



Bake at 350 degrees for 12-15 minutes {or 20-30 minutes for regular muffins, or 1 hour for loaf pan} or until done with toothpick.  Turn out immediately onto a cooling rack and let cool completely {or at least wait long enough so you don't burn your fingers and mouth}.


It wasn't hard to find taste testers.

Do not feed the wild animals. ;)

  1. Judith, your little guy is so cute! What a smile. :) My sister just had a baby this week, so I'm going to let her know about that cookbook and pass along this recipe too. And, I hope you don't mind, but I used your post yesterday as inspiration for mine today. I don't know how blog etiquette works, but wanted to let you know!
